This Strawberry Cucumber Gin Cocktail is so light and refreshing. It's the perfect way to welcome the first day of Spring!

When most people are drinking Guinness or green beer on St. Patrick's Day, I'm at home cooking Italian food and making Spring inspired cocktails. I was lucky enough to have my best friend J. over for the weekend. She used my Fresh Strawberry Juice (made in the pressure cooker) to create this cocktail! It's light, breezy, and refreshing. Strawberry Cucumber Gin Cocktail

This Strawberry Cucumber Gin Cocktail is so light and refreshing. It's the perfect way to welcome the first day of Spring!
prep time: 5 MINScook time: total time: 5 mins

INGREDIENTS:

  • 1 shot of Gin
  • 1 tablespoon fresh strawberry juice
  • strawberry seltzer (or regular seltzer with extra strawberry juice)
  • 1 lemon wedge
  • 2 slices of cucumber
  • agave to taste

INSTRUCTIONS:

  1. In your highball cup, quickly muddle your cucumber slices.
  2. Add 1 large ice cube or several regular size ones. Add in seltzer, strawberry juice, lemon juice from 1 wedge. Stir and add seltzer until glass is full. Sweeten to taste with Agave.

I feel like a new world opened up when I found out that you could essentially "juice" fruit in your pressure cooker. I am a big fan of fancy cocktails. My bar is full of infusions with herbs and fruit. This is so light and delicate but packed with strawberry flavor. The pectin in the fruit makes this already a little thick, so you can drizzle it right on some homemade yogurt or pancakes. If you want to thicken it up, you can make a quick glaze, which you can find the recipe for here.

The steps are pretty simple, you just need a few gadgets and you'll be rocking in no time. I first put about 1 cup of water into my pot. I put in my steam basket with a wide bowl on top. I found the biggest one I could so that all of the juice from the strawberries we are going to place above will drain down into it and I won't miss any of their sweet nectar. 


Place another steam basket on top of the bowl and put in your fruit in a single layer. You can use strawberries, blueberries, blackberries... most anything. I also made a batch with blueberries which came out great. Make sure your fruit has been washed well and any bad spots cut out. 


Cook on high/manual for 12 minutes + 10 minutes NPR. Store your juice in your refrigerator and add to your favorite drinks and smoothies.   



Strawberry Juice (pressure cooker)

makes just under 1 Cup

  • 1 C water
  • 2 C fresh fruit (fruit with a lot of water content work best)
Directions
Pour 1 cup of water into the bottom of your pot. Add your trivet or steam basket and place your bowl on top. Put your second steam basket on top of the bowl and put in your fruit, arranging in a single layer. Lock on lid and cook for 12 minutes on Manual/High + 10 minutes NPR. Store in a sealed container. Keep refrigerated.

I don't know how many times I've seen Golden Milk Tea popping up on my Pinterest feed or instagram photos of friends with their $6 golden milk drinks at a fancy cafe. It has been something I've been wanting to try for over a year but the only place I could find turmeric (fresh) was at the Asian Market, which I don't make it to very often. Finally, my local super market started carrying it! 

There are 100+ medicinal uses for turmeric but the ones that are most known and studied are it's power to reduce inflammation. Curcumin, the active ingredient in turmeric, helps digestion and is an antioxidant.

I've made it on the stovetop, but I was really curious to see how it would come out in a pressure cooker. I tried it two different ways, one a little more successful than the other. Pro-tip, don't put it right in the pot. When I did that, it foamed up and made a mess when I went to release the pressure. My next attempt, with a cup on a steam basket, was MUCH better. I used a coffee mug that I don't care about too much, because I know turmeric will stain anything it comes in contact with. From what I could see, it didn't spill out of the cup at all! Follow the instructions below and you should have a delicious and healthy drink in under 10 minute!

Golden Milk Tea (pressure cooker)

serves 1

  • 1 C of milk (I prefer Almond, but I have friends who use coconut and cashew)
  • 1" piece of fresh turmeric (sliced thin)
  • 1" piece of fresh ginger, sliced thin
  • 8-10 peppercorns
  • 2 cardamom seeds
  • 1/2 tsp coconut oil
  • 1TB honey or agave

    If you don't have access to the fresh ingredients, you can use 1/2 tsp turmeric powder, 1/4 tsp black pepper, 1/4 tsp ginger powder, and 1/8th tsp of cardamon powder

Directions
Put all of your ingredients into a coffee mug except for the honey. Give it a good stir. I use raw honey and add that after it has cooked When you add honey too early it will kill off any nutrients. 

Add 1 1/2 C of hot water to your pressure cooker. Put in your steam basket or trivet and place your coffee mug in the center. Place your pressure cooker lid on and set the manual timer to 4 minutes. When the timer goes off, allow about 1 minutes of NPR for things to settle down, then do quick release for the remainder. 
Strain into another cup and stir in your honey/agave.

If you want to make a few batches, you can make it in a glass bowl or mason jar. I did this and just doubled the recipe and put it in my refrigerator.
