I'm big on flavor and these little bites of heaven are PACKED with savory goodness. I tested these with both garlic powder and fresh garlic. Although I like how the fresh garlic crisped up, it didn't stay on the potatoes as well. If you like garlic as much as I do, you may want to try doing both! The Parmesan makes these even more buttery. I was worried that it might brown too fast but in all of my tests, it came out perfect every time. I cooked these at 360°F for 20 minutes in my CHEFMAN XL 5.5L Air Fryer. If you have a smaller Air Fryer, you will need to do these in two batches.

Air Fryer Roasted Parmesan and Rosemary Potatoes
Savory roasted potatoes with Rosemary, Garlic, and Parmesan.
prep time: 3 MINScook time: 20 MINStotal time: 23 mins
ingredients:
- 2 large russet Potatoes, diced large
- 1 TB Olive Oil
- 1/4 Cup Grated Parmesan
- 1/2 tsp Rosemary, very finely chopped and packed into measuring spoon
- 1/2 tsp Garlic Powder
- 1/2 tsp Kosher Salt (or more to taste)
- 1/4 tsp Paprika
- black pepper
- (Optional, dash of Cayenne for some spice)
- (Optional, 1/2 onion sliced)
instructions
Air Fryer Method
- In a large bowl (or ziplock) add all ingredients and mix thoroughly until potatoes are evenly coated. There should be enough oil to get most or all of the Parmesan to stick.
- Spread out in your air fryer basket, set to 360° F and cook for 20 minutes, shaking when there is about 5 minutes left.
- That's IT! Have these with eggs for breakfast or as a side with your dinner. (It's delicious with Sous Vide Steak)
Oven Method
- Pre-heat oven to 400° F
- Mix all ingredients together and spread out on a baking tray.
- Bake for 50-55 minutes, turning every 15 minutes or so with a spatula.

Tried these last night needing a side for ground prime rib steaks. Excellent!! Used the few leftover ones for breakfast, warming them up and scrambling with eggs. So good!
