Mandarin Lime Curd (pressure cooker)

So you know when you see recipes online and they definitely seem too good to be true? Well this was definitely one of those.



And then I made it and it was 100% magic!

I had done a lot of research on curd recipes and found that this one was the most simple. I really enjoy using different produce that's in season so I thought that mandarin oranges would be perfect. I added lime in because, besides being a delicious combination, I wanted that extra tartness. Enjoy!

Mandarin Lime Curd
  • 1/2 stick of salted butter
  • 1 1/2 C Sugar
  • 3/4 C of Juice (I used 2 limes and 6 mandarins) 
  • 3 large eggs + 2 yolks
  • zest from 1 lime and 2 mandarins
Melt the butter and whisk with the sugar. Slowly add in the juice. When combined, add the eggs, one by one. At this point I wanted to make sure it was super smooth, so I put it in my blender and pulsed on low. I just did about 6-8 pulses. Add in the zest and pulse a few more times just to mix. 

In your pressure cooker, add between 1 1/2 - 2 C of water, insert a steam basket or trivet. Pour your mixture into a mason jar. Place the lid on but don't tighten. Just screw on enough so it won't fall off. Put the lid on and set the pressure cooker to Manual for 9 minutes. When the timer goes off, allow for NPR for 10 minutes.

Remove from the pressure cooker, stir, and allow to cool. This will last up to 1 week. Keep refrigerated.

I'll definitely be enjoying some of this tomorrow morning with some homemade yogurt and fresh fruit!
